Red Beet Cream Flower with Iberitos Nuts, goat cheese and goat cheese mousse

Today, we bring you another recipe from the Mamá Iberitos contest: Flor de Crema de Crema de Crema de Remolacha Roja with Iberitos Walnuts, goat cheese and goat cheese mousse, a creation by Teresa Carvajal that will surprise you with its original flavor and elegant presentation.

List of ingredients:
For the base:
- Crackers (quantity needed)
- Melted butter
For the cream layer:
- 50 grams of Iberitos Red Beet Cream with Walnuts
- 50 grams of cream cheese
- 50 grams of goat cheese
- Salt and pepper to taste
- 1 sheet of neutral gelatine (previously hydrated and drained)
For the goat cheese mousse:
- 50 grams of very cold cream (35% fat minimum)
- 50 grams of crushed goat cheese
- Salt and pepper to taste
For the vinaigrette (optional):
- Extra virgin olive oil (EVOO)
- Modena balsamic vinegar
- Salt and honey
Mode of preparation:
- Prepare the base: Crush the crackers and mix them with the melted butter until you obtain a uniform dough. Spread this mixture in the bottom of a mold to form the base and refrigerate it while you prepare the next layer.
- Prepare the cream layer: In a bowl, mix the Iberitos Red Beet Cream with Walnuts, cream cheese and goat cheese. Season with salt and pepper to taste. Stir in the previously hydrated and drained neutral gelatin sheet. Pour this mixture over the cookie base and let it cool in the refrigerator for a couple of hours to take consistency.
- Prepare the goat cheese mousse: Whip the very cold cream until soft peaks are obtained. Add salt and pepper to taste, and incorporate the mashed goat cheese with encircling movements. Place the mousse in a piping bag and decorate the cream layer with the mousse just before serving.
- Garnish (optional): Just before serving, you can drizzle with a vinaigrette made with extra virgin olive oil, balsamic vinegar of Modena, salt and honey well emulsified.
