Potato Tortilla Chips and Sobrasada Cream Iberitos

List of ingredients:
- 200 grams of home-style potato chips
- 6 eggs L
- 140 grams of Iberitos sobrasada cream
- Extra virgin olive oil
- Salt (optional)
Mode of preparation:
- Beat the eggs in a large bowl. Optionally, we can add a pinch of salt, although the sobrasada already provides a salty touch.
- Heat the iberitos sobrasada cream in a saucepan over low heat until completely melted.
- Add the melted sobrassada to the beaten eggs and mix well until well blended.
- Add the fried potatoes to the mixture of eggs and sobrassada. We break the potatoes carefully so that there are not too big pieces, but trying to keep a certain crunchy texture.
- Let the mixture stand for 30 minutes so that the potatoes soften slightly and absorb the flavors of the egg and sobrassada. If you like your potatoes crispier, you can reduce the resting time or even eliminate it.
- Heat extra virgin olive oil in a large frying pan over medium-high heat.
- Pour the tortilla mixture into the pan and cook for 2-3 minutes on each side, or until the tortilla is set and golden brown to taste.
- Remove the tortilla from the pan and let it rest for a few minutes before cutting and serving.
Tips:
- You can use any brand or flavor of potato chips, but we recommend choosing good quality potatoes with a neutral flavor so that they do not interfere with the flavor of the sobrasada.
- If you like it spicy, you can add a little hot paprika or chili pepper to the mixture of eggs and sobrasada.
- You can also add other ingredients to the omelet, such as poached onion, green bell pepper or grated cheese.
- This tortilla is ideal to serve as a tapa, starter or main dish. It can be served with a green salad or a little alioli sauce.
