Thigh rolls stuffed with Pedro Jimenez Iberitos, bacon and cheddar cheese

Recipe
- Open the thighs, remove the bone and skin.
- Season with salt and pepper.
- Place the cheddar and the slice of cheese on each counter thigh.
- Divide the pâté among the four of us.
- Roll up and close with a toothpick.
- Bake in the oven, 180 degrees, 30 minutes.
- Remove and place a slice of cheddar on each roll.
- Return to the oven for another 20 minutes.
- Serve with french fries and fried peppers.
- The cheddar cheese left on the baking tray, put it on top of the fries.
NOTES
- If you don't have cheddar or simply prefer another cheese, you can change it.
- If you don't have chicken thighs, you can use chicken breasts.
- If you do not want to use bacon, you can use bacon, cooked ham or cured ham.
