Cheesecake with Iberitos Honey and berries frosting recipe

Today we bring you a recipe from Ernesto Revivas, @cocinaconrohichi, a participant in our Chef Iberitos contest. He has conquered us with a unique interpretation of the classic Cheesecake. His ability to combine flavors and textures has resulted in a creation that is a pleasure for the palate.
This tart is much more than a dessert, it is a symphony of carefully selected flavors. The smoothness of the cheese meets the sweetness of the Iberitos Flower Honeycreating a unique combination of flavors.
You will need the following ingredients:
- 350 g. of your favorite cream cheese
- 2 eggs XL
- 175 g. cream 35% M.G.
- 100 g. sugar
- 40 g. all-purpose wheat flour
- Butter to grease the pan
- 2 cans of Iberitos Flower Honey
- Fruits of the forest
Elaboration:
- Choose the mold, in this case a 20x20cm round springform pan. Grease it with butter and line it with parchment paper or baking paper. The fact of lining it with paper will allow us to unmold the cake without any problem. Set aside.
- Preheat the oven to 200º C, heat up and down.
- In a bowl add all the ingredients, the cream cheese, the cream, the two eggs, the sugar and finally the flour. It is necessary that the cream cheese is at room temperature to be able to work it, because if we add it directly from the refrigerator, it will be too hard to be able to integrate it with the rest of the ingredients.
- Beat the mixture. We can beat well with a whisk or even use a hand mixer. With the mixer we will make sure that the lumps are totally eliminated, but in fact it is convenient not to beat the mixture too much. Pour the mixture into the lined mold and place it in the oven previously heated to 200º C.
- Bake the cheesecake for approximately 45 minutes at 200º C. and place it on the tray in the middle of the oven. Temperature up and down, with air. Check that it is ready by poking it with a toothpick. If it comes out clean, it is ready.
- Serve with Iberitos Flower Honey to add that extra sweetness and top with berries.
