Pâtes farcies with white shrimp mousse Iberitos

Who doesn't love potatoes? Ummm, what a delight.

 

 Today, we propose you a delicious and very simple dish to prepare, of course with Iberian ingredients.

We suggest you to make them with white shrimp, but the options are almost endless because the range of Iberian sauces is very wide.

 

Ingrédients

16 Paccheri (gros macaroni)

Olive oil

3 gousses d'ail

1 poireau

3 carottes

250gr viande de veau

Sel

Poivre molue

5gr d'origan

5gr of basilic

200 ml of vin rouge

3 tomatoes

In this recipe, chef David Gibello chose paccheri (a type of thick macaroni), but we can use any other kind of meat, according to our preferences.

 

You can try it withother Iberian varieties. Would you like to make it with the Serrano ham or the ham pâté for example? The choice is very large...

 

Let's start with the preparation of the sauce for the fried potatoes:

Chauffez d'abord l'huile d'olive dans une poële. Add three goulashes of olive oil and let them brown, being careful not to burn them, which will give them a golden touch. At the same time, bring the pots to boil, we do everything at the same time.

 

Once the ail is browned, add a pot and three carottesemincées to our sauce. Add the veal that we have already sautéed and add the veal. Let it cook for 3-4 minutes so that the meat is well cooked and continue with the sauce. As it feels good!

 

Add 5 g of origan, 5 g of basilic (a coffee cup more or less) and mix well. Add 200 ml of red wine and let it reduce for about 5 minutes. Turn now to add the chopped tomatoes and let it return about 5 minutes more. You can now cook the potatoes.

 

We adjust the first sauce base on a plate. Do not forget to reserve a little sauce for later cooking.

We have already indicated that we prepare the potatoes while preparing the sauce. It is enough to pour the water and once it is boiling, add the seltzer and the potatoes. We let it cook as long as the manufacturer indicates and ... we already have our sauce ready.

 

Once the potatoes are cooked, we replace them with the sauce that we have prepared before. We put the paccheri on the bottom that we have put on top in the plate and we replace it with the rest of the sauce that we have put on the side.

We adjust the grated cheese and put the plate under the grill for about 6 minutes until the cheese is soft.
