Zucchini Rolls Stuffed with Vegetable Delight Recipe

Ingredients:
- 2 zucchini (400 g)
- 200 grams of Iberitos Vegetable Delight
- 1 egg
- 3 tablespoons flour
- Sea salt to taste
- Extra virgin olive oil (for frying)
- 1 roasted red bell pepper
- 2 boiled eggs
- 4 slices of seeded bread
Preparation:
- Wash the zucchini and, with a vegetable peeler, remove thin longitudinal slices. Set aside.
- Heat extra virgin olive oil in a frying pan over medium-high heat.
- Beat the egg in a plate. In another plate, place the flour.
- Dredge the zucchini slices in flour first, then in beaten egg.
- Fry the zucchini slices in the hot oil until golden brown on both sides. Remove to a plate with kitchen paper to absorb the excess oil. Season with salt and pepper to taste.
- Cut the roasted red bell pepper into thin strips.
- Chop the boiled eggs.
- Toast the slices of seeded bread.
- To assemble the rolls: place a spoonful of Iberitos Vegetable Delight on the end of each zucchini slice. Roll up and fasten with a toothpick.
- Serve the zucchini rolls on toasted seeded bread. Garnish with roasted red bell pepper strips and chopped boiled egg.
You can add spices to the Iberitos Vegetable Delight before filling the rolls. You can use paprika, garlic powder, onion powder, oregano, basil, or any other spice you like.
Sauté Iberitos Vegetable Delight with chopped onion and garlic before stuffing the rolls. This will give it a more intense and aromatic flavor.
