Hummus pancakes, spiced chickpeas, red onion and feta cheese

  • Ingredients for the spiced chickpeas:
    - Chickpeas.
    - Spices (sweet paprika, garlic and onion powder, black pepper...).
    - Olive oil.
    - Salt.
  • For the pancakes:
    - Corn flour.
    - Hot bell pepper sauce (optional, can be substituted with a few drops of Tabasco).
    - Water.
    - Salt.
  • For the filling:
    - Iberitos hummus.
    - Feta cheese.
    - Purple onion.
  1. We start preparing the tortillas:
    We put the yellow corn flour, a little salt and a teaspoon of cornstarch. Mix well while adding hot water little by little until we obtain a manageable dough.
    Stretch the dough between two sheets of parchment paper and cut out the desired shape. Fry in abundant oil.
  2. For the spiced chickpeas we only have to mix them with our favorite spices, a little oil and a little salt. Spread them on a baking tray and bake them at 200 degrees stirring them from time to time until they are slightly crunchy.
  3. We assemble our canapés by placing our Iberitos hummus on the base of the pancakes and on top the spiced chickpeas, some pieces of feta cheese and some strips of red onion. Sprinkle with parsley and ready, enjoy!
