Beet pizza with spinach, goat cheese and honey

Today we bring you a daring, different and very beautiful recipe ?

This pizza ? pink ? from @lacocinadeirene is beet with spinach, goat cheese and #Iberitos flower honey.

Ingredients:

  • 250 gr of strong flour.
  • 100 gr of beets.
  • 1 teaspoon of olive oil.
  • 7 grams of salt.
  • 80-90 gr of water.
  • 5-8 gr fresh yeast.

  1. We start by mashing the beets until we get a paste.

  2. Then put all the ingredients in the bowl of the mixer except the water, which we will add little by little until we obtain a sticky dough.
    Knead for at least 5-10 minutes.

  3. Brush a bowl with oil and with the help of a scraper place the dough in the bowl. Let it ferment for one hour at room temperature and one night in the refrigerator.

  4. The next day, remove from the refrigerator, divide the dough into portions and place in preferably round bowls greased with oil. Let it ferment until it doubles in size.

  5. Once it has risen, sprinkle a little flour on a sheet of parchment paper and carefully pour the dough so as not to degas it. Sprinkle more flour on top and press from the center to the edges to give it the shape (do not press the edges).
    Cover with plastic wrap while we prepare the cream cheese that will go on the base.

  6. To do this, in a frying pan put a good splash of cream and goat cheese. Season with salt and pepper and let everything is well integrated.

  7. Place the sauce on the base of our pizza along with some very thin strips of red onion. Bake at 240 degrees (preheated oven) until it begins to brown.

  8. Place on top some spinach previously sautéed in the pan, a few pieces of goat cheese, toasted pine nuts and drizzle with Iberitos flower honey.
