In our Chef Iberitos recipe contest , we are very lucky to have participants like @lahormigatenaz. His recipe for "Cream Cheese Dice with Cherry Coulis and Pistachios" is a real feast for the senses.

Enjoy this fusion of flavors and textures! The smoothness of Iberitos Cream Cheese combined with the sweetness of the cherry and the crunchiness of the pistachios will leave you wanting more.

You will need the following ingredients:

  • Iberitos Goat Cheese Cream Melt
  • Corn flour
  • Milk
  • Salt
  • Butter
  • Egg
  • Bread crumbs
  • Chopped parsley
  • Extra Virgin Olive Oil
  • Cherries 
  • Sugar
  • Lemon juice
  • Pistachios

Let's start cooking!

  1. Heat the saucepan and pour into it the Iberitos Goat Cheese Cream, a spoonful of butter, salt and a glass of milk.
  2. Heat while stirring. Add two tablespoons of sifted corn flour and continue stirring for 10 minutes or until it takes consistency.
  3. Pour the mixture into the mold and let it cool.
  4. Wash, pit and chop the cherries. Once cut, heat them in a saucepan and add the sugar and lemon juice. Let them cook until a puree texture is obtained. Pass the puree through a strainer and set aside.
  5. Unmold the croquette dough. Dip in beaten egg, bread crumbs with chopped parsley and fry in abundant hot oil. Reserve on absorbent kitchen paper.
  6. Serve the goat cheese croquettes with the cherry sauce and chopped pistachios.
  7. It's time to enjoy!
