Cannelloni stuffed with knuckle of pork and Iberian Pate of Iberitos

If you still have to decide on some of the dishes for your Christmas lunches or dinners, here's a simple recipe from @claudiamchef10 with which you're sure to triumph: Cannelloni stuffed with knuckle and Iberian pate.

Ingredients:

  • 1 package of roasted pork knuckle
  • 150 gr. of Iberitos Iberian Pate.
  • Red wine.
  • Chicken broth.
  • Tubes of cannelloni, the quantity will depend on the number of guests.

Elaboration:

First, we are going to make the filling:

  1. Heat the knuckle in a pot, and reserve its juice in a separate pan, to make the sauce later.
  2. Crumble the knuckle and put the bones in the casserole where we reserve the juice.
  3. Add the Iberitos Iberian Pate to the previously crumbled knuckle, to give more creaminess to our meat.
  4. Stir until a paste is formed.
  5. Prepare a sleeve and put the cannellini filling in it. Set aside while we make the sauce.

Now let's go for the sauce :

  1. We take the bones and the juice of the knuckle that we have reserved previously and we put them to cook with a little chicken broth and red wine.
  2. When the bones release their juices, strain the broth.
  3. Add a chocolate chip, put on low heat and let it reduce and become shiny.

Now it's time for the pasta! Here we can give you few indications, you simply have to cook according to the package directions. Each brand has a cooking time.

 

To finish, we introduce the filling we have just made into the pasta and plate it, putting a little sauce on the base.

Now we just need to give it a crunchy touch with chopped almonds and garlic chips; although here you can add the ingredients of your choice.
