A perfect dish to cook outdoors and near a swimming pool if possible! ? Prepare the ingredients for the weekend and swap the barbecue for this healthy #singluten-free #egg-free #milk-free and #dryfruit-free proposal.
Ingredients
- 1 liter of vegetable broth
- 600 ml. of rice
- 1 small rabbit, cut in pieces
- A handful of peas
- A "boletus and truffle cream" Iberitos
- 3 cloves garlic
- 1 leek
- 1 ripe tomato
- Olive oil
- Salt
To prepare the rice:
-
First of all, we are going to seal the rabbit meat. To do this, in the same container in which you are going to cook the rice, add a little olive oil and fry it on all sides over high heat. Remove and set aside.
In the same oil, we are going to make the sofrito. You can use the vegetables you want, we have chosen leek and ripe tomato. -
Wash the vegetables well and chop them finely to taste along with the garlic cloves without germ.
-
Add the chopped vegetables to the oil that is already hot from searing the rabbit and lower the heat to medium so that they poach slowly.
Once the vegetables are soft, add the Iberitos truffle and boletus cream and integrate it well with the rest of the sauce. -
Add the rice, and stir so that it gets the flavors of the sofrito.
Add the vegetable broth, add salt and mix everything with a wooden spoon to make it more or less homogeneous.
We will no longer stir the rice while it is cooking, so make sure that there is more or less the same amount of broth throughout the pot or paella in which you are cooking. -
Pour in the handful of peas.
-
When the broth begins to bubble, lower the heat to medium-low and let it continue cooking until the rice has absorbed it completely.
It is best not to stir the rice so that it does not release starch and the grains stick together. If you need to do so because you see that it is sticking to the bottom, it is preferable to grab the paella by the handles and shake it lightly. You can even use a wooden spoon to stir, only the problematic area. -
When there are 5 minutes left to finish cooking, add the rabbit pieces to finish cooking along with the rest of the ingredients.
-
Let the rice stand for 5 minutes off the heat to settle and serve warm and fresh.
Let us know how this rice tastes! You'll be looking forward to repeat. Mmmm...
